Vegetable & Meat Burrito

Burrito

Ingredients:

1 can refried Beans (Vegetarian)
1 package flour or spinach tortillas
Leftover meat
chopped green peppers
chopped green onions
chopped onions/shallots
Sharp Cheddar Cheese or Shredded cheddar cheese
chopped tomatoes
2 tbsp vegetable oil
1 small package shredded lettuce
4 tbsp of hot salsa


Methods:

  1. Heat the oil in a small wok.
  2. Pour the chopped onions, green peppers, green onions, chopped leftover meat (optional) and tomatoes. Saute gently for a few seconds.
  3. Add the refried beans into the mixture and add the salsa. Stir gently.
  4. Spinkle salt and pepper to taste if necessary or you can put Mrs. Dash into the mixture.
  5. Saute and stir gently for 5 minutes or until it's hot.
  6. Then add a handful of cheddar cheese to your taste.
  7. Cooked for 10 minutes and stir at the same time.
  8. Once cooked, let it sit for 3 minutes to cool.
  9. Heat up the tortillas for 5 seconds or until it softened
  10. Then put the shredded lettuce on the warm tortilla, followed with the cooked burrito mixture. Fold the burrito according to the picture at the back of the tortilla or as shown here in the final picture.
