| Tuna Fish Enchiladas |
Ingredients 4 small cans of Tuna Fish 1/2 of 8 oz cream cheese 8 oz sour cream 1 can of diced tomato 1 small can salsa (mild or hot) 1 cup vegetable broth 1 stalk green onion 1 small shallot (minced) 10 flour tortillas Cheddar cheese to taste 1 cube Greek Nablus cheese (option) Equipment: Blender and 9" casserole dish (rectangular) Oven: 350F or 375F
Method: - Pour the tuna fish into a bowl and add scallion (sliced), shallot, salt and pepper to taste. Add 1/4 of the cream cheese into the tuna fish mixture. Stir it until all is blended and set aside.
- Spray the rectangular casserole dish.
- Warm the tortilla so it's easily folded. Put 2 or 3 tbsp of the tuna fish mixture in the middle of the warm tortilla and roll it carefully. Then lay it in the casserole dish. Do the same to all 10 tortillas.
- Put the vegetable broth, cream cheese, nablus cheese, cheddar cheese, diced tomatoes, salsa, a pinch of salt and pepper into the blender. Blended them until all mixture are fully mixed.
- Then pour the blended mixture into the casserole dish containing the rolled tortillas.
- Sprinkle either mix cheeses or cheddar cheese or mozarella cheese on top of the blended mixture.
- Baked it for 25 to 30 minutes and let it cool for 5 to 10 minutes before eating.
- Serve with salad.

| Rendang Lamb Liver (Suriyati's style) |
Ingredients Lamb liver minced onion minced garlic chilli paste 2 tbsp curry powder 1 cup milk or coconut milk water Prik Khing Curry Paste1 tbsp sugar salt & pepper Note: Thai Curry Paste from Thailand already contained lemon grass, etc.
Methods:
- Marinate the liver for a few hours.
- Heat the oil and saute the onions, garlic, chilli paste, curry paste, salt and pepper to taste for a few seconds.
- Add a little water to the mixture. Then add the milk and stir gently.
- Add the curry powder and stir the mixture gently until it blended.
- Add a little more water if the mixture is too dry. Stir gently. Let it cook for a few minutes. Cover the wok at low heat.
- Then add the sugar and stir the mixture gently.
- Cover and let it cook for a few minutes at low heat. Uncover the mixture and let it cook for another few minutes until the liquid slowly dries off BUT not burn.
- Optional: You can add tomatoes (cut) and oriental long beans (cut) into the mixture. Let them cook before turning off the stove.
- Ready to serve with rice.

| Fried Spagetti or Spagetti Goreng |

Ingredients1 handful of spagetti 1 cup chicken broth (leftover is fine) or water chilli paste 2 tbsp soy sauce minced onion powdered or minced garlic powdered or minced ginger white pepper salt tomato pastespinach or any leafy vegetables 1 small can mixed vegetables (peas & carrots) 1/4 tofu (optional) Optional meats (choose 2):boneless/skinless chicken or beef bologna or skinless/boneless turkey or stew beef Methods: - Boil the spagetti until al-dente. Set aside.
- Diced the meats into meadium size pieces. Diced the bologna into small/medium pieces. Diced the tofu into small pieces.
- Heat the wok with 3 capful oil. Fry the tofu for a few minutes until golden brown or cook. Then add the meats into the wok. Let it cook for a few minutes.
- Saute the onions, garlic, chilli, ginger, salt, and white pepper in the same wok at medium heat for a few seconds.
- Add the chicken broth into the wok's mixture and stir gently for a few second. If too dry add 1/2 cup of water. Then add 1 tbsp tomato paste. Also add the soy sauce. Stir for a few seconds.
- Drained the spagetti's water, and add the spagetti into the wok. Fold the spagetti together with the mixture gently. Cooked for a few minutes until the mixture is blended.
- Lastly, add the spinach and the can vegetables. Fold the spagetti mixture together with the vegetable. Cook the mixture for a few minutes or until the spagetti is slightly blanched.
- If you like saltish meal sprinkle the salt and folded fried the mixture.
Serve with omelette or fried onions or jalapenos pepper or just eat!! |

| Peanut Cake |
Ingredients 1 box 'Betty Crocker' Cake mix (White) Crushed peanuts 1 cup microwavable frosting (Vanilla) Pandan flavored dye Equipment: Two 9" round pan Oven: 350F for 25 mins for each pan (if put separately) Methods: - Pour the cake mix into a bowl and follow the direction on the box.
- Blended the mixture using hand mixer
- Pour half of the blended mixture into one pan.
- Add a little dye to the other half and mixed it gently.
- Then pour the mixture into another pan.
- Bake them for 25 minutes or follow the instruction on the box.
- If baking separately, then put one into the oven at 25 minutes each.
- Once baked, cool them for 15 minutes before putting the frosting.
How to layered the cake: - Pour the melted frosting onto the first layer.
- Then sprinkle the crush peanuts.
- Put some frosting on the bottom of the other half of the cake and attached that half onto the top of the first cake. The frosting acts like a glue.
- Then pour the balance of the melted frosting onto the cake and sprinkle the peanuts. Let the frosting cooled before cutting. Then put the cake in the refrigerator.

| Upside Down Chicken Rice |

IngredientsChicken drumsticks/wings/etc 3 cups Briani rice 3 cups chicken broth salt & pepper to taste 1 cucumber Equipment: Rice cooker Methods: - Scoop 3 cups of briani rice into a bowl and set aside.
- Thaw the chicken and sprinkle salt and pepper to taste.
- Put the chicken into a pot and pour water until it covers the chicken. Then sprinkle salt and pepper to taste. Let the water-chicken boil for 30 minutes or until cooked.
- Wash and clean the rice 3xs at least.
- Sprinkle salt into the rice to taste.
- Drain the chicken broth from the water-chicken mixture into a measuring cup. Measure it up to 3 cups. Set it aside.
- Heat oil in a pan and fry the boiled chicken until it slightly brown.
- Spray oil in the rice cooker pot and arranged the fried chicken into the pot.
- Then add the cleaned rice onto the chicken in the rice cooker pot.
- Pour the broth into the rice cooker. Let it cook automatically.
- Serve the cooked chicken rice with sliced cucumber and 'mae ploy' chilli ketchup.

| Pancake Balls |

Ingredients1 cup Pancake mix or All Purpose Flour 3/4 cup of water Dried anchovy 1 stalk scallion or green onion salt to taste Methods: - Cut the scallion. Mix pancake mix with 3/4 cup or more water.
- Stir the mixture until the lumps disappear. Set aside.
- Soak the dry anchovies into warm water for a few minutes.
- Then add the anchovies and the scallion into the mixture.
- Heat the skillet with 1 cup or 8 tbsp of oil or dip fryer.
- Then scoop 1 tbspoonful of the mixture and drop it into the frying pan. Fry it till it brown or until the mixture afloat.
- Serve it hot with ketchup for dipping.
